The cultivation of SCOBY (Symbiotic Culture of Bacteria and Yeast) is part of the process of making kombucha and vinegar: it is a film formed by active microbes at the boundary between liquid and air.

We tend to perceive SCOBY as round because fermentation usually takes place in wide, circular vessels.

In this ongoing ceramic series, altering the shapes of the vessels’ openings allows the forms of SCOBY to be redefined, while also shifting how we look at, understand, and make use of it.
