Soybean Diverging

Soybean Diverging is a hands-on workshop format accompanied by a set of custom-designed tools. Participants are invited to experience the entire process of tofu making, while discovering, tasting, and exploring the diverse soy products that emerge at different stages of production.

Through practical experimentation, the workshop introduces different coagulants, their working principles, and the distinct textures they create, alongside the culinary traditions associated with them. Participants also learn how tofu can be further processed into a variety of dishes.

By exploring the multiple possibilities that emerge from a single ingredient, the workshop highlights the diversity of soy-based food cultures and encourages a resource-conscious approach to food production, making use of the different products and by-products generated throughout the process.

The first edition was invited by fungiii community and hosted at C*Space Berlin
